Tasting Note
Stone fruit, ripe peach and citrus with cardamom, leesy/toffee and light smoky volcanic ash. Oily, medium-bodied texture with bright saline minerality and a long, refreshing finish.
Food Pairing
Grilled or fried bluefish, shellfish, seabass, sashimi/sushi, grilled mackerel with soy-ginger, Thai seafood curry, fresh and medium-aged cheeses, asparagus, vegetable tempura.
Production Method
Hand-harvested Carricante fermented in stainless steel and large oak casks; aged 12 months on fine lees in equal parts cement and large wood, then bottle-aged (approx. 12 months). Organic viticulture.
Vineyard Info
Family estate founded by Alberto Graci (est. 2005). Graci farms ~28 ha on Etna’s north slope; Muganazzi is a 3 ha single-vineyard at ~700 m in Passopisciaro, farmed organically.
