Tasting Note
Crisp, mineral-driven with lemon peel, white pear, yellow apple and stone-fruit notes, flinty/sea-spray minerality, bright saline acidity and a long, chalky finish.

Oysters, shellfish, grilled or roasted fish, light pasta with lemon/olive oil, goat cheeses; Asian: sushi/sashimi, tempura, Thai steamed fish, Vietnamese spring rolls.
Production Method
Hand-harvested; slow hydraulic pressing without destemming; fermented in concrete tanks with selected yeasts; matured on fine lees for ~6–8 months before bottling.

Family-run Graci (founded by Alberto Aiello Graci, c.2004). Vineyards on Etna’s northern slopes (~600m), working sustainably with native varieties and traditional alberello training.
