Tasting Note
Bright pale straw. Tropical fruits (banana, ripe pineapple) with citrus and light brioche; subtle oak spice, toast and caramel. Creamy texture balanced by bright acidity, finishing long with almond notes.

Food Pairing
Roast chicken, creamy mushroom pasta, lobster or grilled salmon; miso-glazed black cod, Cantonese roast duck, dim sum, and mildly spicy Thai or Sichuan dishes.

Production Method
Whole-cluster gentle pressing; fermented in 400L and 225L French oak and concrete eggs with oxidative handling. 25% new French oak, >10 months on lees, small native MLF fraction, minimal SO2 at bottling.
