Tasting Note
Purple-ruby. Plum, dark berries, coffee, violet and smoke with tobacco and earthy notes. Full-bodied, ripe fruit, well-knit tannins, plush texture and a focused, lengthy finish.

Food Pairing
Western: grilled or roast beef, lamb shoulder, venison, aged hard cheeses. Asian: Sichuan-style braised beef, Cantonese roasted duck, Peking duck, rich hot pot or soy-braised short ribs.

Production Method
Gently crushed; low-temperature alcoholic fermentation (≤23°C) with some extended skin contact; MLF in neutral oak; 18 months in 225L French Troncais oak (97% new, 3% one-year-old); bottled and cellared ≥1 year before release.
