Tasting Note
Dense, deep red with blackberry, blue-fruit, star anise, pepper and toasty oak. Layered palate of caramel, cocoa and vibrant dark fruit; refined tannins and a long, warming finish.

Food Pairing
Western: grilled ribeye or lamb chops, braised short ribs, mushroom risotto. Asian: lamb skewers (yang rou chuan), Peking duck, Sichuan hot pot, char siu.

Production Method
Hand-harvested; crushed and fermented in small stainless tanks with controlled extraction; malolactic fermentation in neutral oak; aged 14 months in 225L & 400L French oak (60% new, 30% 1-year, 10% older).
