Tasting Note
Deep dark red with purple hue; ripe dark plums, cassis and blue fruits, cedar oak spice, vanilla and chocolate; generous, fine-coated tannins, juicy mid-palate and long, balanced finish.

Food Pairing
Western: roast lamb, grilled ribeye, mushroom risotto, aged cheddar. Asian: Peking duck, char siu (Cantonese BBQ pork), Sichuan spicy beef, braised pork belly, Korean BBQ.

Production Method
Small-batch fermentation; up to 16 months in French oak (13% new, 25% 1-year, 62% 2–4-year); small portion fermented/aged in concrete.
