Tasting Note
Bright pale straw with yellow tint. Complex aromas of tropical fruits, zesty citrus, stone fruit, cashew and pear; spicy oak and mineral texture. Elegant palate of lemon tart, white peach and nuts, balanced acidity and a long finish.

Food Pairing
Western: roast chicken, lobster with beurre blanc, creamy pasta, seared scallops. Asian: Cantonese steamed fish, soy-ginger seabass, mild Thai coconut curries, sushi and sashimi, light tempura.

Production Method
Dry-farmed, hand-harvested; 100% whole-cluster pressed. Fermented in 400L Vosges oak casks; 70% matured in new 400L French oak for 10 months with regular lees stirring. Small portion underwent MLF; bottled under DIAM 10 after ~5 years cellaring.
