Tasting Note
Bright lemon, red apple and peach with biscuit, brioche and light hazelnut from long lees aging. Medium–full and creamy with lively acidity, balanced dosage and a long, buttery floral finish.

Food Pairing
Oysters, scallops, smoked salmon, creamy seafood pasta, pâté; Asian: sushi, sashimi, tempura, dim sum (har gow), steamed fish.

Production Method
Méthode traditionnelle (bottle secondary fermentation). Base wines fermented in stainless steel and some in oak; over eight years on lees; hand riddled and disgorged; minimal sulfur.
