Tasting Note
Pale yellow with fine mousse. Aromas of fennel, star anise, menthol, poached pear, nougat and almond. Palate shows mirabelle, rhubarb and reinette apple, with a dense mid‑palate, chiseled acidity and a lively, slightly bitter mineral finish.
Food Pairing
Western: rack of pork, duck breast with figs or prunes, scallops, oysters, rhubarb tart. Asian: sushi/sashimi, tempura, Peking duck, steamed dim sum, lightly spiced Thai or Vietnamese seafood dishes.
Production Method
Méthode traditionnelle (traditional method). Fermented in small vats, no malolactic fermentation, aged on lees (~7 years) prior to disgorgement; dosage 4 g/L.
