Tasting Note
Aromatic caramel, vanilla, toasted oak, dark fruit and warm spice with subtle banana esters. Smooth entry, toffee and brown-sugar mid-palate, light earthy/smoky undertones and a warm, medium-length spice finish reminiscent of aged bourbons and sherry-matured malts.
Food Pairing
Western: grilled ribeye, smoked pork belly, aged cheddar, charcuterie, dark chocolate. Asian: Peking duck, Korean BBQ (bulgogi), miso-glazed black cod, spicy Sichuan dishes, yakitori.
Production Method
Neutral grain spirit base is blended with pure, naturally-sourced flavor and aroma molecules identified from aged spirits and assembled 'note-by-note' in a lab; bottled without traditional barrel aging.
Vineyard Info
Glyph is produced by Endless West, a San Francisco startup founded in 2015 by Alec Lee, Mardonn Chua and Josh Decolongon. The company makes molecular spirits in its Dogpatch lab and launched Glyph in 2018.
