Tasting Note
Evolved Saint-Julien: blackcurrant and dried plum with cedar, tobacco, leather and forest floor. Softening tannins, medium–full body, savory cocoa and spice notes, and a long, earthy finish.
Food Pairing
Western: roast lamb, aged beef, duck confit, mushroom risotto, hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), braised beef noodle dishes, rich miso-glazed dishes.
Production Method
Traditional Bordeaux methods: hand-harvested, fermentation in temperature-controlled vats, extended maceration, aged 12–18 months in French oak barrels (portion new), blended and bottled.
