Tasting Note

Rich, dessert-like profile of baking brioche, baked apricot, vanilla crème, toasted almond, honeycomb and orange syrup, with warm spice and a long, lemon-zesty finish.


Food Pairing

Western: crème brûlée, baked apple tart, almond financier, foie gras, roasted chestnuts. Asian: mango sticky rice, honey-glazed roast duck (Peking duck), char siu pork, sesame prawn toast. Cheese: blue cheese or aged Gouda.


Production Method

Matured 14 years in ex-bourbon American oak casks then finished for 2 years in a mix of sweet white-wine casks (Sauternes, Monbazillac, Moscatel, Tokaji); bottled at 46% ABV.
