Tasting Note
Smooth and complex: caramelised pears, dried apricot, sultanas, chocolate-coated ginger, vanilla, toasted oak, cinnamon and nutmeg with a long warm, spiced finish.
Food Pairing
Western: dark chocolate, crème brûlée, roasted lamb, aged cheddar, foie gras. Asian: Peking duck, char siu, Korean BBQ, spicy Sichuan dishes, teriyaki salmon.
Production Method
Distilled in copper pot stills from malted barley; aged over 21 years in traditional casks then triple-finished in first-fill Oloroso sherry, Tronçais oak Cognac and Colheita vintage Port casks; bottled at 43% ABV.
