Tasting Note
Sherry-forward and opulent: nose of dates, raisins, dark chocolate and orange zest. Palate of sticky date pudding, marzipan, vanilla, caramel, oak spice and citrus. Long, warming finish with fruitcake, cocoa and toasted nuts.

Food Pairing
Western: dark chocolate, blue cheese, roasted lamb, fruitcake, glazed pork belly. Asian: Peking duck, Chinese red-braised pork (hong shao rou), char siu, spiced Korean BBQ, sticky-sweet Cantonese dishes.

Production Method
Unpeated single malt distilled in copper pot stills, matured for 22 years in oak, then finished in rare Spanish Palo Cortado sherry casks to add rich dried-fruit and spice character.
