Tasting Note
Dark-gold single malt with baked apple, dried figs, candied orange peel, toffee and vanilla. Palate shows rich dried fruit, caramel, dark chocolate and warm baking spice; long, warming oak-spiced finish with subtle smoky notes.
Food Pairing
Western: aged cheddar, blue cheese, dark chocolate, roast lamb, duck confit. Asian: miso-glazed black cod, yakitori (grilled chicken), Korean BBQ, char siu pork, mildly spicy Sichuan beef.
Production Method
Distilled from 100% malted barley in pot stills; matured at least 18 years in a mix of American ex‑bourbon and Spanish Oloroso sherry casks, then married in small oak marrying tuns for consistency.
