Tasting Note
Warm spice and honeyed vanilla with rich dried fruit, marzipan, cinnamon and ginger; silky, full-bodied with lingering sweet oak, toffee and a long, satisfying finish.

Food Pairing
Western: dark chocolate, blue cheese, roasted duck, pork belly, charcuterie, grilled steak. Asian: Peking duck, teriyaki beef, Korean BBQ, char siu, aged tofu, spicy Sichuan dishes.

Production Method
Matured at least 15 years in ex-bourbon, ex-sherry and new American oak casks; finished by marrying in a never-emptied Solera Vat then rested in oak marrying tuns before bottling.
