Tasting Note
Dark plum and cherry with floral and savoury nuances, smoky stalk and toasty oak. Opulent, textured palate with chalky, refined tannins and bright acidity; concentrated, elegant finish.
Food Pairing
Western: roast duck, mushroom risotto, pork loin, grilled salmon, lamb shoulder. Asian: char siu, miso-glazed eggplant, teriyaki salmon, duck pancakes, soba with mushrooms.
Production Method
100% Pinot Noir; parcels fermented separately in 1–2 tonne fermenters, pressed to barrel, completed natural malo, 25% new French oak. Sulphured Feb 2020 and blended Sept 2020.
