Tasting Note

Ripe pear, stonefruit and apricot with lemon‑lime and orange peel, roasted cashew and oatmeal nuances. Opulent, textural palate with bright acidity, minerality and a persistent, silky finish (fresh citrus and white spice).


Food Pairing

Western: roast chicken, pork belly, creamy seafood, seared scallops, mushroom risotto. Asian: miso‑glazed cod, pork‑belly bao, tempura prawns, lightly spiced Thai curry, sushi (richer cuts).


Production Method

100% barrel fermented in French oak (10% new); matured 9–12 months on lees with fortnightly stirring; minimal RS (0.8 g/L).
