Tasting Note

Deep crimson Shiraz with concentrated blackberry, blood plum and blueberry, violet florals, dark chocolate and spice (clove, cinnamon). Palate is rich and layered with velvety tannins and a long, savory finish.


Food Pairing

Grilled lamb chops, beef short ribs, BBQ brisket, aged cheddar; Korean BBQ (bulgogi), char siu, spicy Sichuan beef, hoisin-glazed duck.


Production Method

Small-batch open-top fermentations with hand plunging and basket pressing; matured ~18 months in French oak hogsheads and puncheons (new and seasoned).
