Tasting Note
Deep ruby with concentrated dark-plum, blackcurrant and black pepper spices, layered with violet, graphite minerality and cedar oak. Medium-full, silky texture and fine grain tannins with a long, savory finish.

Roast lamb, grilled ribeye, beef short ribs; aged cheeses; Peking duck, char siu (Chinese BBQ pork), Korean BBQ, Sichuan-style braised beef, miso-grilled eggplant.

Production Method
Hand-harvested old-vine Shiraz; small-lot open fermentations with daily plunging or rack-and-return; matured ~20–24 months in new and seasoned French oak barrels.
