Tasting Note
Bright red cherry, strawberry and red currant with mineral soil, subtle leather and spice; silky tannins and a poised, savory finish.

Food Pairing
Western: roast duck, coq au vin, beef bourguignon, lamb racks, aged cheeses (Époisses). Asian: Peking duck, char siu (Cantonese BBQ pork), teriyaki salmon, mushroom stir-fry, Korean BBQ (bulgogi).

Production Method
Hand-harvested; cold soak and fermentation with indigenous yeasts; matured ~12–14 months in French oak barrels with a proportion of new oak; full malolactic fermentation.
