Tasting Note
Elegant red cherry and raspberry core with violet florals, subtle spice and white-pepper notes, fine minerality, silky texture and bright acidity; refined, saline finish with medium-long persistence.

Western: roast duck with cherries, lamb, beef tartare, wild mushroom risotto, soft-ripened cheeses. Asian: Peking duck, miso-glazed fish, char siu, shiitake ramen, soy/ginger glazed salmon.

Production Method
Hand-harvested Pinot Noir; traditional fermentation with partial whole berries, aged ~18 months in French oak (partially new barrels).
