Tasting Note
Delicate red-fruit nose; palate of cherries, raspberries and spice with subtle earthiness. Silky texture, soft tannins and a medium-length, slightly spicy finish.

Western: roast pork, roasted poultry, mushroom risotto, charcuterie, soft cheeses. Asian: Peking duck, char siu, miso-glazed salmon, yakitori, mushroom hot pot.

Production Method
Hand-harvested; destemmed with pre-ferment cold soak, indigenous yeast fermentation; matured 12–18 months in oak barrels (partial new oak).
