Tasting Note
Spice- and mineral-accented red and blue fruit with violet and rhubarb. Sappy and concentrated yet lithe: black raspberry, spice cake and blood-orange bitterness on a long, smooth finish with supple tannins.

Western: roast duck, grilled lamb chops, roasted pork shoulder, beef brisket, charcuterie and hard cheeses. Asian: Peking/hoisin duck, char siu, Korean BBQ (bulgogi), Sichuan-style beef, fermented soy braises and yakitori.
Production Method
Dry‑farmed old-vine fruit; native yeast fermentation in small open-top tanks, manual punchdowns, some whole clusters, manual pressing; aged ~two winters in neutral/used French oak barrels.
