Tasting Note
Bright red and blue fruits (raspberry, sour cherry), violet and floral pastille notes, blood‑orange lift, saline minerality and garrigue spice. Fine chalky tannins, lively acidity and a long, savory finish.

Food Pairing
Western: roast lamb, grilled pork, beef steaks, pizza with tomato/charred vegetables. Asian: Korean BBQ (galbi), char siu/roast pork, medium-spiced Sichuan dishes, teriyaki or soy-grilled fish.

Production Method
Hand-harvested, indigenous-yeast fermentations in open-top lagars with partial whole-cluster inclusion, gentle manual punch-downs, slow malolactic and ageing two winters in used/neutral barrels.
