Tasting Note
Perfumed and precise: sour cherry, pomegranate, dried flowers and rose with raspberry-leaf and saline freshness. Vibrant acidity, fine-grained tannins and a long, grippy finish.

Food Pairing
Roasted venison, grilled lamb, roasted pork, charcuterie, Spanish tapas and paella; Korean BBQ (bulgogi), Cantonese char siu, spicy Sichuan-style noodles, grilled yakitori.

Production Method
Native-yeast fermentation in open-top vessels with hand punch-downs, some whole clusters; pressed in a small basket press and aged ~two winters in used/neutral oak.
