Tasting Note
Redcurrant and vivid blue-fruit with notes of sweetbrier, graphite and garrigue. Bright acidity, juicy core, fine/creamy tannins and a full, mineral-laced finish.

Grilled steak, roast lamb, mushroom risotto, aged cheddar; Korean BBQ (bulgogi), Sichuan pepper beef, char siu pork, hearty noodle dishes.

Production Method
Hand-harvested, indigenous yeast fermentation in open lagars with a portion foot-trodden whole-cluster; manual punchdowns and pressing; aged two winters in neutral/used barrels.
