Tasting Note
Vivid ruby with perfumed aromas of blackcurrant, cherry pit, raspberry, potpourri and black pepper. Spicy, juicy palate with candied plum and balsamic notes, silky fine-grained tannins and a long, sappy, balanced finish.

Food Pairing
Grilled ribeye or roasted lamb, aged cheddar and mushroom dishes; Asian pairings: Korean BBQ, Chinese red-braised short ribs (hong shao), Sichuan pepper beef, char siu or savory hot pot.

Production Method
Hand-harvested; fermented with native yeasts in open conical lagars, caps punched down by hand; matured two winters in well-seasoned/neutral French oak barrels; no new oak; low-intervention methods.
