Tasting Note
Perfumed mountain Cabernet: cherry, raspberry and cassis with violet and black-pepper spice. Fresh acidity, silky fine-grained tannins and sappy, long finish; elegant and mineral-driven.

Food Pairing
Western: grilled ribeye, roast lamb, mushroom or truffle risotto, aged cheddar. Asian: Korean BBQ (bulgogi), Chinese braised beef or char siu, Sichuan pepper steak, yakitori (grilled chicken skewers).

Production Method
Hand-harvested; native-yeast fermentation in open conical/lagar fermenters with manual punch-downs; matured two winters in well‑seasoned/neutral used oak barrels; no new oak.
