Tasting Note
Pale coral with sour cherry, watermelon and wild strawberry, subtle herbs and saline minerality. Bone-dry, very high acidity, crunchy red-fruit core with a light phenolic grip and a vibrant, long, savory finish.

Food Pairing
Western: seared foie gras, grilled octopus, roasted salmon, charcuterie, paella. Asian: salmon sushi/sashimi, spicy Thai curries, grilled scallops, Sichuan-style spicy dishes, ceviche-style preparations.

Production Method
Mostly direct-pressed Cariñena with a small Monastrell addition; indigenous-yeast fermentation, pressed whole-cluster/direct press, aged one winter in old barrels, foudres and tanks. Low-intervention, ancestral hand-and-horse vineyard work.
