Tasting Note
Amber, intensely perfumed with jasmine, honeysuckle, bee pollen, lemon peel and honeyed peach. High acidity, chalky texture and candied lemon notes with a steely, phenolic-driven long finish; tactile, slightly orange-tinged white.

Food Pairing
Roast chicken, grilled white fish, lobster or shellfish, creamy risotto, aged Gouda, miso-glazed black cod, pork belly, spicy Thai or Vietnamese dishes, and dim sum.

Production Method
Hand-harvested old-vine fruit; indigenous yeast fermentation; ~60% skin-contact in amphorae, remainder tank; aged ~11–12 months in amphorae, flex eggs and used barrels; minimal SO2.
