Tasting Note
Spiced cherries, dark red fruit, dried herbs, bark and mineral spice. Medium-full body with firm, chalky tannins, bright acidity and a slightly chewy, compact finish.

Western: roast lamb, grilled beef, braised short ribs, mushroom stews, aged Manchego, charcuterie. Asian: Korean BBQ (bulgogi/grilled beef), char siu, beef teriyaki, rich Sichuan dishes, hoisin-glazed pork, yakitori.

Production Method
Hand-harvested organic grapes; separate fermentation in stainless steel with native yeasts; ~12 months in French oak (mostly second-use) before bottle aging.
