Tasting Note
Fine, persistent mousse with aromas of white/yellow fruit, citrus, lychee and brioche. Palate is vibrant, creamy and rounded with citrus, stone-fruit, toasted-yeast and a chalky mineral finish.
Food Pairing
Western: oysters, scallops, smoked salmon, crab tartlets, deviled eggs, roast chicken in cream sauce. Asian: sushi/temari, tempura prawns, langoustine wonton broth, miso-fried oysters, sashimi. Also pairs with grilled vegetables and mild cheeses.
Production Method
Méthode champenoise; parcels vinified separately, blended with ~25–30% reserve wines, dosage ~8 g/L, aged minimum ~20 months on lees.
