Tasting Note
Silky Pomerol showing ripe black cherry, plum and raspberry with notes of truffle, dark chocolate, violet and warm spice. Polished, fresh acidity, velvety tannins and a saline, persistent finish.
Food Pairing
Western: roasted lamb, beef tenderloin, duck confit, mushroom risotto. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy‑braised short ribs, stir‑fried shiitake with oyster sauce.
Production Method
Hand-harvested, destemmed, fermented in stainless/concrete tanks; matured ~12–18 months in French oak (≈50% new); bottled without fining.

Small 2–2.5 hectare Pomerol estate, managed by Guillaume Thienpont (Vieux Château Certan) since 2018; focused on low yields and careful élevage.
