Tasting Note
Dark plum, blackberry and black cherry with black pepper, savoury ironstone minerality and subtle oak. Medium-bodied, silky texture, fine tannins and a long, savoury finish (cool-climate Shiraz).

Food Pairing
Western: grilled lamb chops, roast beef, BBQ pork ribs, smoked brisket. Asian: Korean BBQ, char siu pork, Sichuan pepper beef, teriyaki duck, spicy Thai basil chicken.

Production Method
Minimal-intervention, fermented on skins and matured ~12 months in older oak puncheons; sustainably farmed and organically certified.
