Tasting Note
Vibrant, mineral-driven Riesling with lime blossom, preserved lemon, white peach, honeysuckle and saline/brine notes; laser-like acidity, pink grapefruit and a long, saline finish.

Food Pairing
Western: oysters, ceviche, goat cheese, grilled white fish, roast chicken with lemon. Asian: sushi/sashimi, Thai green curry, spicy Sichuan dishes, grilled prawns, Korean BBQ (lighter cuts).

Production Method
Organically farmed fruit from ironstone gravel soils; cool-climate, slow ripening. Partial lees contact (~9 months) for texture and a small oak component (~8%) used for mouthfeel. Bottled under screwcap.
