Tasting Note
Cherry, bramble and plum fruit with redcurrant lift, stony minerality and a saline edge. Medium-full body, firm/‘gritty’ tannins and a spicy, peppery finish with good length.

Food Pairing
Western: roast duck, lamb stew, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu, Korean bulgogi, miso-glazed aubergine, soy‑glazed pork.

Production Method
Hand-harvested Pinot Noir; partial destemming, fermentation in small tanks, aged in French oak barrels (Premier-Cru élevage, moderate new oak). Estate follows organic practices.
