Tasting Note
Ripe red cherry and raspberry, black cherry depth, floral violet and forest floor notes; lively acidity, silky-medium tannins, cedar spice and a mineral, lingering finish.

Food Pairing
Western: roast duck, coq au vin, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, Korean bulgogi, shiitake hot pot.

Production Method
Hand-harvested Pinot Noir from village and lieu-dit parcels; organic viticulture and low yields, native-yeast fermentations, aged ~12–16 months in French oak (partially new).
