Tasting Note
Silky red fruits (sour cherry, red plum), forest floor and porcini, peach pit and sandalwood; spicy, earthy undertones with fine-grained tannins and a mineral, lingering finish.

Food Pairing
Western: roast duck, lamb, beef tartare, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso-glazed black cod, soy-braised pork belly, mushroom hot pot.

Production Method
Certified organic vineyards; hand-harvested, partially destemmed, indigenous-yeast fermentation in tank; aged ~12–18 months in French oak (≈30–40% new).
