Tasting Note
Fresh red cherry and raspberry with black cherry and subtle plum, floral and earthy undergrowth notes; silky, medium-bodied with fine spice and minerality, gentle tannins and a savory, lingering finish.

Food Pairing
Western: roast lamb, duck confit, mushroom risotto, charcuterie, aged cheeses. Asian: Peking duck, char siu, beef bulgogi, miso-glazed eggplant, soy‑braised short ribs.

Production Method
Hand-harvested Pinot Noir; partial destemming, cold pre-fermentation maceration, stainless/open-top fermentation, 16 months in French oak (c.35% new); low-yield, organic/viticulture-focused practices.
