Tasting Note
Red and dark cherry, blackcurrant, spice and earthy undergrowth with hints of tobacco and liquorice; medium-full body, firm fine-grained tannins and a savory, persistent finish.

Western: roast beef, lamb, duck, mushroom risotto, braised short ribs. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed aubergine, Korean BBQ (bulgogi), soy-braised beef.

Production Method
Organic viticulture (Ecocert); hand-harvested; 60–75% destemmed; fermentation in tanks with extended maceration; aged in oak (~30% new for village wines).
