Tasting Note
Pure Pinot Noir: red and black cherry, wild raspberry, violet, forest floor and spice, with saline minerality, fine-grained tannins and a long, sap-driven finish.

Food Pairing
Western: roast duck, boeuf bourguignon, lamb stew, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed black cod, red-cooked pork, Korean grilled short ribs (bulgogi).

Production Method
Traditional Burgundian vinification with gentle extraction, partial whole-cluster use, fermentation in open-top vats and élevage in small French oak barrels (est. 12–18 months; moderate new oak). Organic vineyard practices.
