Tasting Note
Golden-amber with aromas of honey, dried apricot, fig, almond and light oak; sweet yet balanced by fresh acidity, smooth and rich on the palate with a lingering dried-fruit finish.
Food Pairing
Western: foie gras, pâté, blue cheeses, almond tart, dried-fruit desserts; Asian: Peking duck, hoisin-glazed pork, duck bao, tuna tataki with wasabi mayonnaise, mildly spicy Thai dishes.
Production Method
Made by adding young Cognac eau-de-vie to freshly pressed white grape must (fortified on harvest day), then aged in French oak casks—minimum 1 year for Pineau, longer for 'Vieux' expressions.
