Tasting Note
Concentrated dark cherry, blackberry and plum with cocoa, tobacco, leather and balsamic herb notes. Velvety, dense tannins, toasted spice and mineral streaks give structure; long, persistent finish with a perfumed, slightly menthol lift.

Western: roasted lamb, braised beef, grilled ribeye, beef ragu, aged hard cheeses (Parmigiano, Pecorino), blue cheese. Asian: Peking duck, char siu or hoisin-glazed pork, Korean BBQ (galbi), rich Sichuan beef, mushroom and soy braised dishes.
Production Method
Hand-harvested Sangiovese and Merlot vinified separately; fermented in stainless steel (≈26–28°C), maceration 14–18 days. Aged ~18 months in French oak (barriques for Merlot, tonneaux for Sangiovese; ~70% new) and finished in concrete before bottling.

Castello di Fonterutoli (Mazzei family since 1435). Siepi is a ~6 ha vineyard on Alberese soils at ~260 m a.s.l., south–southwest exposure; vines ~13–38 years old; estate emphasizes parcelized vinification and a gravity-flow cellar.
