Tasting Note
Fresh red cherry and cranberry fruit with rose-petal florals, subtle earth, graphite and warm spice. Silky texture, refined tannins and a mineral, gently persistent finish.

Western: roast duck, mushroom risotto, herb-roasted pork, coq au vin, grilled salmon. Asian: Peking/roast duck, miso-glazed salmon or aubergine, char siu pork, lightly spiced Korean BBQ, shiitake/soy noodle dishes.
Production Method
Hand-harvested Pinot Noir; mostly destemmed, native-yeast fermentation in stainless/cement, malolactic in barrel and aged ~18 months in oak (≈20% new). Light fining and slight filtration before bottling.
