Tasting Note
Elegant red Burgundy: bright red cherry and wild strawberry, hints of rose petal, light spice and earthy undertones; fine-grained tannins, lively acidity and an energetic, refined finish.

Western: roast duck, roast chicken, pork loin, mushroom risotto, coq au vin. Asian: Peking duck, char siu, miso-glazed salmon, shiitake stir-fry, soba with mushrooms.

Production Method
Hand-harvested; 100% destemmed Pinot Noir; fermentation in stainless and concrete tanks with native yeasts; malolactic in barrels; aged ~12–18 months in oak; lightly fined/filtered.
