Tasting Note
Pear, lemon rind and white flowers with flinty/mineral and light petrol notes; toasted almond and vanilla from oak. Medium–full, saline texture, concentrated citrus fruit and a long, citrus-driven finish.

Western: pan-seared scallops, lobster with beurre blanc, roast chicken with cream sauce, mushroom risotto. Asian: sushi/sashimi, miso-glazed black cod, tempura, milder Thai green curry, steamed dim sum.
Production Method
Hand-harvested; barrel-fermented with indigenous yeasts and aged ~12 months in French oak (c.30% new); minimal-intervention, traditional Burgundian vinification.
