Tasting Note
Citrus, green apple and pear with white flowers, almond and subtle vanillin oak. Medium-to-full-bodied, punchy and mineral-driven with crisp acidity and a long, compact finish.
Food Pairing
Western: lobster, scallops, roasted chicken in cream sauce, buttered fish, creamy pasta. Asian: sushi/sashimi, miso-glazed fish, tempura, steamed fish with ginger & soy, light Chinese roasted poultry.
Production Method
Hand-harvested, indigenous yeast fermentation, barrel fermentation/malolactic in oak, aged 12–18 months (approx. 25–40% new oak), fined and lightly filtered.
