Tasting Note
Lemon, green apple and white flowers with pronounced crushed-stone minerality. Bright, racy acidity, subtle pastry and vanilla notes from oak, with a spicy stem-ginger finish. Precise, linear and long.

Food Pairing
Western: roast chicken, lobster, grilled sea bass, mushroom risotto. Asian: sashimi/sushi, miso-glazed black cod, tempura, Cantonese steamed fish, mild Thai coconut dishes.

Production Method
Hand-harvested; native-yeast fermentation and malolactic in oak barrels; ~11 months élevage in a mix of new and used barrels (≈1/3 new); lightly fined and gently filtered before bottling.
