Tasting Note
Fragrant white-peach and honeysuckle aromas with orange blossom and light spice. Honeyed, textured palate, citrus and almond notes, slightly lower acidity than some Chassagne cuvées and a defined, saline-tinged finish.

Food Pairing
Roast chicken, buttered lobster or scallops, creamy mushroom risotto; grilled sea bass, seared tuna. Asian: miso-glazed black cod, sushi/sashimi, light tempura, Cantonese steamed fish.

Production Method
Hand-harvested Chardonnay; indigenous-yeast fermentation in French oak barrels; aged ~12 months with roughly 25–35% new oak; lightly fined and filtered.
